Goodbye 2010!

It's hard to believe that 2010 only has a few short hours left! It's been an adventure filled year - some adventures were long planned and anticipated, some goals were left unmet, and some were fun surprise adventures joined the year, overall it's been a blessed year. Here is my final review of 2010's alternative new years resolutions....

Apple picking followed by applesauce making with the help of this lovely Christmas gift
Ice skating at the National Art Gallery
Seeing the Terracotta Warriors on display at the National Geographic Museum.
Summer picnic with friends
Going to a U Street DC Jazz show and Ben's Chili Bowl
Making my first quilt, baby sized so as not not overwhelm myself (thanks for the kit, Mom!)
Taking in the South on our trip to Tybee Island, Georgia.
Going to the Chinese New Year parade in DC's Chinatown and/or having a Chinese New Year Party.
Taking a special trip, yet to be finalized, this summer...so details are on the down low. :)
Helping out with or going on a mission trip.
Finally checking out DC's Eastern Market!
Celebrating Summer and Winter Solstice (June & December 21, 2010), not sure how exactly, but something fun and simple.

The final count is fail on numbers 3 and the first part of 5, but I guess those can spill over into 2011, right? :) All the rest were met and fully enjoyed. I'll have to see what kind of goals I'll set for 2011 in the coming days. Until then, Happy New Year everyone! May your 2011 be blessed and full of wonderful adventures!

December 22 - Our Christmas

Tomorrow we head to Michigan to celebrate Christmas with Joel's family so tonight was our little Christmas, just Joel, Mackey and me. We usually open gifts in the morning but since we want to be able to pack up and hit the road before lunch tomorrow we decided to celebrate tonight.

Stockings were hung by the chimney, with care :)

Our traditional cinnamon rolls & hot drinks were savored

with twinkling lights, a roaring fire & Christmas music it was a perfect evening

December 21 - Winter Solstice

It's amazing how candles can change your dining room from ordinary into lovely. Today is winter solstice - It was my plan to celebrate it in some way, and after many ideas I settled on a simple meal and lights, twinkling and festive. I made our new favorite soup (from allrecipes.com)-

Sweet Potato, Carrot, Apple, and Red Lentil Soup

1/4 cup butter
2 large sweet potatoes, peeled and chopped
3 large carrots, peeled and chopped
1 apple, peeled, cored and chopped
1 onion, chopped
1/2 cup red lentils
1/2 teaspoon minced fresh ginger
1/2 teaspoon ground black pepper
1 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon paprika
4 cups vegetable broth
plain yogurt

Melt the butter in a large, heavy bottomed pot over medium-high heat. Place the chopped sweet potatoes, carrots, apple, and onion in the pot. Stir and cook the apples and vegetables until the onions are translucent, about 10 minutes.
Stir the lentils, ginger, ground black pepper, salt, cumin, chili powder, paprika, and vegetable broth into the pot with the apple and vegetable mixture. Bring the soup to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the lentils and vegetables are soft, about 30 minutes.
Working in batches, pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
Return the pureed soup to the cooking pot. Bring back to a simmer over medium-high heat, about 10 minutes. Add water as needed to thin the soup to your preferred consistency. Serve with yogurt for garnish.

December 19 - Baking Party!

A party that is dedicated to making cookies?! This is my kind of party! My friend Pam hosted a Christmas cookie baking party today, and I'm hoping it will become an annual event around these parts...lots of fun and we each left with a yummy assortment of cookies to eat or share. In respect of my waistline my cookies will be shared with neighbors tomorrow...although I'm sure a few of them will be 'lost' before they make their final destinations... :)

December 18 - Heat? What Heat?

So...yea...the heat went out again. If you are counting that is outage # 4. It went out yesterday, Friday, at 5am. It's now Saturday noon and the repair guy is here yet again. I won't comment on our cold 30 hours except to say we now own two space heaters, much less firewood and are very thankful for our electric blanket. We just heard the igniter go on, which has been the problem and is the part that was originally replaced over a week ago. We are cautiously optimistic that it will stay on, but the repair man is still working...oh the saga of our furnace...

December 17 - Doggie Date

Mackey had a friend over tonight and we let her owners come too. There was dog treats, playing in the backyard, dog toys and cuddling on the couch - a lovely doggie date. :) Happy Weekend!

December 16 - God is SO Good

It was 3:30am this morning and I had never in my life been so happy to see a pilot light flame. For the third, yes THIRD time in less than one week our furnace stopped working. This time was less than 24 hours after the repair man had returned and deemed it "working". Long story short my wonderful little brother was willing to give some late night advice from Seattle and after tightening a wire in the thermostat the flame kicked in and has been running for 18 hours. I am so grateful that we didn't have to have another repair appointment. After falling into bed early this morning the words of this childhood song kept running through my head...

December 15 - Warming Up!

Thanks to a repair man we again have heat! Our house is slowly warming back up, just in time because temperatures aren't going to break freezing for a few days and they are predicting some possible snow tomorrow evening. My dear furry friend must not be feeling the warmth just yet - he has barricaded himself up in a blanket on the sofa with no obvious intention of moving. Lucky little dog :) Stay warm my friends!

December 14 - Wishful Thinking...

Today we woke up to a nice dusting of snow...unfortunately too little for a delay or snow day. Just enough to let some wishful thinking creep in...Snow days are a hidden perk to teaching you know. :) Came home to no heat, again. So now I'm doing some wishful thinking for warmth! At least the repair guy is returning tomorrow morning to repair the repair from Friday :( Please send up some wishful prayers that we (and our pipes) stay warm tonight. Good night!

December 13 - Fabulous Friends

I have fabulous friends. They are such a blessing to me, true gifts from above. Tonight was our monthly Bible Study/Girls Night in and to let them know that they are loved and appreciated I put some of yesterday's candy cane biscotti to good use inside these...

Each of my buddies got a Caribou cup filled with candy cane biscotti and a made just for them coffee cozy. It's a silly little gift, but once the idea hit, I just had to :) Caribou Coffee was kind enough to give me the empty cups. As simple as it was I got so much joy out of planning this simple little gift that it reminded me that this season is all about sharing love - in big and small ways.

December 12 - Candy Cane Goodness

I'm an East coaster with west coast roots, thus every Christmas packages of love get sent to my west coast family. Every year I try and include some yummy treat, because...I just love treats! This year I found the recipe below in October and it along with a recipe for killer good hot chocolate mix turned into a goodie bag that was included in my west coast shipments. Each goodie bag held a Classic Christmas CD, a jar of homemade hot chocolate, a bag or two of candy cane biscotti, some Christmas coasters and a milk frother (to make the hot chocolate extra yummy). I had so much fun putting it all together! Today I whipped up some more biscotti for yet another gift idea, this time closer to home...more on that later. So, without further adue here's the recipe:

Candy Cane Biscotti

originally from Annie's Eats

2½ cups all-purpose flour
1½ tsp. baking powder
¼ tsp. salt
8 tbsp. unsalted butter, at room temperature
½ cup sugar
3 large eggs
2/3 cup finely chopped peppermint candies, plus extra for garnish (I used Andes Peppermint Crunch Baking Chips the second time around for inside the biscotti)
14 oz. white chocolate

Directions:

Preheat the oven to 350° F. Line a baking sheet with parchment paper or a silicon baking mat.
In a medium mixing bowl, combine the flour, baking powder and salt; stir briefly with a fork to combine. In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter and sugar on medium-high speed until well combined, about 2 minutes. Beat in the eggs one a time, mixing well after each addition. Add in the dry ingredients and mix on low speed just until incorporated. Fold in the 2/3 cup crushed peppermints with a rubber spatula until evenly incorporated.

Evenly divide the dough into 4 portions. Form each into a 9″ by 1½” log on the prepared baking sheet, spaced evenly. Bake until the cookies are light golden brown on top, about 18-20 minutes. Remove the pan from the oven and let cool for 10 minutes on the cookie sheet. Reduce the oven temperature to 325° F.
After the logs have cooled for 10 minutes, use a sharp serrated knife to cut the logs into ½-inch slices on the diagonal. Arrange the cut pieces on the baking sheet, laying on one of their cut sides so one cut side is facing up. Bake for 15 minutes more, until the cookies are light golden brown and crisp. (They may seem a bit soft, but will firm as they cool.) Transfer to a cooling rack to cool completely. Once cool lay out on wax paper or silicone baking mat.

Once the biscotti have cooled, melt the white chocolate in the top of a double boiler. Drizzle white chocolate over biscotti. Sprinkle with extra crushed candy canes while the chocolate is still wet. Let stand at room temperature until the chocolate has set completely. Store in an airtight container.

December 11 - It's Beginning to Look...

This year I decorated the mantel for the first time, it's sad to say since we have such a classic Christmas mantel to decorate. I guess I've always thought, "it's only for a month!" or "it's just us" so I haven't bothered. But this year, I decided it was time, even just for us and even just for a month and I'm glad I did - it really makes the house more festive! I pulled out things we had stashed away to put it all together, only buying the garland, lights, candles and wire tree, leaving my grand total mantel decorating at $20. It's a very 'us' mantel, which I suppose is how it should be. :)

December 10 - First Snow!

Though it didn't stick, today was our first snow of winter and it sure looked pretty coming down! It's been a very busy week and our home repairs (plumber and furnace repair men were both at our home today) didn't help, however I keep coming back to this...

With all of the hustle and bustle this season brings it is easy to loose sight of why I celebrate. It can be easy to forget that this season is to remind me of the great blessing of Immanuel - God with us. But when morning dawns so bright and clear I am reminded so clearly of His majesty and the season regains its focus.

December 7 - Sending Season's Greetings

I love getting Christmas cards! I think it's a combination of hearing from friends and family near and far and getting snail mail (which I love anytime of the year). So, today our first batch of Christmas cards went out. Every year I say I won't do cards, but I always do, mostly because I enjoy getting them so much, that I figure it's sort of required that I reciprocate. Whether you send cards, or emails or make phone calls I highly recommend taking time to share some holiday love with those you love...even if you don't love it - they will. :)

Our Scottish Cairn Terrier, Mackey, enjoyed (along with his people, us) our area Scottish Christmas parade this morning. Much to his frustration we dressed him up with a Scottish scarf. Good Times!

December 3 - Trimmin' the Tree

Tree day today! Yeah! Usually we head out to my year round favorite orchard, but since it closes at dusk and my dear other half is working long hours right now we headed up the road to a buy from a family that sets up a stand each year. In a matter of minutes we had picked out 'the one' and were ready to bring it, in all it's pine scented glory home. Awaiting us at home was an little afternoon project of mine that we have declared to be a yearly tree decorating dinner tradition from now on - Brie en Croute with soup. Later we will have something that is already a holiday staple - Vegan Eggnog Cheesecake. (I seriously recommend this recipe, I have made it for my neighbors and co-workers both - it gets gobbled up like nobodies business!) Good thing Christmas calories don't count, right? (And just in case they do, I did get a jog in earlier :)

I stumbled upon this recipe, which is where I got the delicious photo and decided that I SO have to make these sometime! Layers of chocolate and peppermint frosting, ganache, and cupcake? Oh My! Here are the directions from 'Our Best Bites'. They even provide a cute label you can download and print off to put on the top of each jar. What a cute favor/name card to have sitting on someones plate at a dinner party, or just hand out...wow...this is Christmas food bliss in my humble opinion!

December 2 - Mint & Chocolate Yumminess

Peppermint Candies ready to be ground up for a greater purpose - a baked good!

If you've read my blog for very long, or know me, you know I LOVE cookies. If I had to give up all dessert but cookies for the rest of my life I would be okay. But, let's not be talking upsetting things like giving up dessert in this most lovely dessert laden time of year...back to cookie talk - I'm on day two of baking, yesterday for family Christmas packages that are now headed out west and today for my students. Yesterday's recipe is a secret for now since some of you reading will be receiving those packages that I just sent, but today's recipe is a new one and I'll glady share. After seeing the ad in nearly every magazine I've picked up in the last month they are finally getting into my oven - Mint Chocolate Chip Cookies. The original 'recipe' is made with a Better Crocker Sugar Cookie mix and some extras, however 3 (yes all 3) of the stores I hit up to get a mix were all out. I suppose everyone has seen those delicious looking pictures! So I made them with my own made-from-scratch sugar cookie recipe and then adding in the mint yumminess. Here's my version...

Mint Chocolate Chip Cookies

2 & 1/3 C flour

2 T cornstarch

1/4 t salt

1/4 t baking powder

1 C Earth Balance margarine

1 C sugar

2 t vanilla

1/2 t. mint extract (or less!)

1/4 C soy creamer (any type of milk/soymilk would work)

6-8 drops of green food coloring

heaping 1/2 C chopped Andes mints

Mix dry ingredients, cream together margarine and sugar with hand mixer until fluffy (this takes 3 minutes or so) add in vanilla, mint, and milk - mix until combined. Add food coloring drops - blend until color is even. Add half of flour mix and blend until combined, then mix in last half of flour mixture by hand. Fold in chopped mints. Scoop onto cookie sheet and bake at 350 for 10 minutes. Remove from oven and enjoy! These are festive and yummy - a keeper recipe in my book.

Just as a side note, there aren't any peppermint candies in these cookies, they were ground up for a later this month baking project. Can I tell you again how much I love that it's cookie season once again?! :) What are your favorite Christmas cookies?

December 1 - Advent Begins

Today Advent begins! In my classroom Advent is a very special time. I teach at a Christian school so I put my all into making this season one that is not only about gifts and Santa - but Jesus. Each and every day during class worship we sing Christmas songs then follow the Bible reading for the Jesse Tree Ornaments. Each felt ornament is tucked into a pocket of my advent calendar (along with a special yummy treat). Each child gets at least one day during the month to pull out and hang the ornament and of course enjoy their special treat. Today I kicked off the day, and month, with a reading of the Christmas story from Matthew and Luke while we set out the parts of my nativity (made by my mom - a copy of one I spent many happy Christmases playing with as a child). The kids responded with 'ohs' and 'wows', I think we're off to a good start.

This year I am feeling super spirited about Christmas, not sure why, just excited to celebrate this time of year. I just wish I had more time to craft and bake and be merry! Last night we went out to dinner with Joel's brothers and their wives. We've all know each other for many years now...at least 10. We were chatting about other vacations, trips, and places we've been on together and I realized something important...

....we are most defiantly blessed with family that are friends and friends that are like family. Truly, I am blessed with both fabulous people as friends and family. May you find the same blessings this holiday season!

Wisdom of Childhood

Every time I go to the beach with my niece and nephews and watch them run in the waves, roll in the sand and build sand castles I am reminded at how much fun we grown ups miss out on. Somehow as we age we loose our ability to find joy in the simple things of this life and world. Sand for instance was of immense joy to the kid crew today - ages 9 down to nearly 2. Especially for the two youngest ones - shoveling and playing in the sand brought hours of fun. Maybe grown ups don't need to spend hours shoveling wet sand into a small bucket to find joy in simple things, but the pleasure of sun on our faces, or the smell of something yummy in the oven could just do the trick...that is if we let it. As we get ready for the Thanksgiving holiday let's try to enjoy life's simple pleasures - there are more of them than we could count...kind of like sand on the beach. :)

Joel's Pumpkin Pie Cake

As I enjoyed my Joel made pumpkin spice cafe con leche this morning, I remembered I needed to type out our all time favorite Thanksgiving Dessert Recipe to take on our trip and then decided I must share it because it's too delicious to keep all to ourselves....Enjoy!

Pumpkin Spice Cafe con Leche....YUM!

Joel’s Pumpkin Pie Cake

Crust:

1 package yellow cake mix (reserve 1 cup of mix later in recipe)

½ C. butter or margarine, melted

1 egg

Combine remaining cake mix, butter and egg. Press into bottom and half way up sides of 9x13 baking dish.

Filling:

Mix the following and spread over crust-

2 eggs

1 c. evaporated milk

1 c. sugar

1 ½ c. pumpkin (1 can)

2 t. cinnamon

1/8 t. salt

Topping:

1 c. reserved yellow cake mix

½ c. sugar

1 t. cinnamon

¼ c. butter or margarine

Mix cake mix, sugar and cinnamon together. Cut in cold butter until crumbly. Sprinkle on top of filling.

Bake at 350 for 1 hour. Serve with whipped cream.

Next June my husband and I will celebrate 10 years of married life. For some this may seem short, others long, but either way it's a milestone for us. When I heard this song earlier today, it resonated with me as a real song about love and marriage, none of the over the top romantic stuff - but real marriage and real commitment. The real stuff does feel like minefields and storms at times and it truly is "harder than we dreamed" at times, but that is where the commitment kicks in and you have to hold to the promise you've made. The part of the song that talks about laying your own life down for another made me think of the times that I have or haven't 'won' what I wanted in a completely new way. There certainly have been many times when I could have laid down my will for my spouse, knowing that there will be times he does the same for me yet so often we just think of ourselves. Choosing to lay down your will for your spouse is powerful. Personally I've seen this clearly with one issue...by choosing to lay down something important to me and with God's help not pushing to 'win' has brought growth to me and I feel our marriage. It has allowed me to trust God more and let Him lead. It's shown me that laying ourselves down for our spouse really is at the heart of a loving and giving relationship, a real marriage that has minefields and storms. Plus, it's much easier to walk, or dance, through those minefields with a partner, which I suppose is what marriage is all about to begin with.

Calling All Scarves

Anyone who knows me personally knows I have a bit of an obsession with scarves. I've hit the double digits in how many I have and love to wear them year round. Some less obsessed folks might be digging out their scarves about now and looking for a fun way to wear them this year....but never fear, I have found a new (well, new to me) way to sport your scarves this fall. I wore one this way today it was comfy and as always a fun accessory. So without further delay, here you go....

Did Someone Say Christmas?!

Yeah, yeah I know it's still Thanksgiving season. I promise I'm not trying to rush through the beautiful of this fabulous holiday dedicated to eating and being thankful (come on, this is SO my holiday!). But I am excited to share my newly created Advent Calendar....

Using this as my inspiration I happily spent most of a Sunday sewing away and must say I am happy with the finished product. My plan is to use this in my classroom, until there might be a day I'll have little ones to share it with at home. This year I am again doing the Jesse Tree readings/ornaments with my students, so I'll have a mini-candy cane and the ornament of the day in each pocket of my Advent calendar ready for my students to enjoy for class worship. I'm praying it will be another way to make the holiday season more special and Christ focused for my students.

Another Advent idea that I stumbled on is these action cards - what a great idea! I just might have to add these to my little pockets too!

Oh and just in case anyone else loves the holidays, photography and is up for a little challenge I'm joining the December Photo Project again this year. Check it out if your interested, I'd love to have some company! :)

This Old House

This seasons inaugural fire!

We have an old house, it was built in 1949 and that's exactly what I love about it. Sure the rooms are small, the kitchen tiny, but the history and charm of older homes has always appealed to me. Growing up we would spend our Saturday afternoons (well, not ALL of them) driving to housing developments and exploring the new houses. I grew to love architecture, even wanting to pursue it as a career for a time. But as I explored all those beautiful and sometimes huge homes, they seemed to be lacking something...maybe the soul, or story that a house finds with age. So when we decided to buy it was always with older buildings in mind. Our first place, a condo, was built in the 40's too. You just can't reproduce the old hard wood floors, solid doors, aged small doorknobs, molding and the spirit of these old places. Don't get me wrong new homes are beautiful and spacious, but we're old home folks, which brings me back to tonight's fire in our old fireplace. There's something about sitting in front of a fireplace that has seen many a decades pass with various owners all sitting where I've sat, it gives me perspective on my life. So, old man winter bring the season on...I'll take the colder and shorter days. You'll find me bundled up with a certain furry friend, a hot drink and a book enjoying our old house and fireplace.

Operation Christmas Child - It's Shoebox Time!

Yes, my friends it is collection week this week! In fact you have from today, November 15 until next Monday, November 22 to get your shoebox(es) turned in. I really do hope that you'll get involved in this great project that spreads so much love to children who desperately need it in this world.

Fall Yumminess

I seem to be blogging mostly about food lately...must be because fall and winter are great times to bake and eat! Well, even though next week this time I will be sunbathing on the beach instead of baking (another story), I am loving the yummy fall food, okay mostly fall desserts, that are finding their way into my kitchen. The latest was homemade gingersnaps paired with Pilgrim Joe's Pumpkin Ice Cream (thank you Trader Joe's for the ice cream and Joel for the delicious idea). These cookies were quick to whip up and so yummy...perfect for fall!

Homemade Gingersnaps

from my favorite cookie cook book

3/4 c. sugar
1/3 c. molasses
1/2 c. oil
1/2 t. vanilla
3 T. soy milk
1 3/4 c. flour
3 t. ground ginger
1/2 t. nutmeg
1/2 t. salt
1/2 t. baking soda

Mix wet and dry ingredients separately then combine. Bake at 350 for 12 min.

Fabulous Fall Treat - Apple Pie Cupcakes

These are SO yummy! They require a few steps more than I am usually willing to do for cupcakes, but are so worth it in the end. The original recipe is from Annie's Eats, a new food blog favorite of mine - I made some adaptions and here's my vegan version.

Apple Pie Cupcakes

For the cupcakes:

3 cups whole wheat white flour

1 tbsp. baking powder

½ tsp. salt

1 cup Earth Balance butter, at room temperature

1 ½ cups sugar

6 tsp. Ener-G egg re placer mixed with 8 tbsp. water

1 ½ tsp. vanilla extract

1 cup vanilla almond milk

For the apple filling:

2 tbsp. Earth Balance butter

2 tsp. cinnamon

2-3 tbsp. sugar

3 large apples, peeled, cored and diced

For decorating: (butter cream frosting!)

2/3 cup Earth Balance butter, softened

1 1/4 cup powdered sugar

1/8 tsp. salt

2 tsp. vanilla extract

2 tbsp. soy creamer (vanilla flavored if possible)

Cupcakes: Mix flour, baking powder and salt. Mix together egg re placer and water with electric mixer. Add in butter and sugar then vanilla and mix until fluffy. Slowly add in dry ingredients until combined. Divide the batter evenly among the cupcake liners, filling them about 2/3-3/4 full. Bake at 350 until golden and a toothpick inserted in the center comes out clean, about 18 to 22 minutes. Remove from the oven and allow to cool for 5 minutes in the pans. Transfer to wire racks to cool completely.

Apple filling: Heat the butter in skillet over medium-high heat. Add the cinnamon and sugar and cook for a minute, until the mixture begins to bubble. Lower the heat to medium and stir in the apples. Mix well. Cook until the apples are somewhat tender, about 10 minutes. Remove from heat and let cool.

While the apple mixture is cooling, use the cone method to remove a chunk from the center of each cupcake, making sure to leave a rim around the top of the cupcake. Fill the holes with the cooled apple mixture. To decorate, top each cupcake with a swirl of vanilla butter cream.

Now eat and enjoy...over and over again! :)

Celebrating ~~Summer~~ and Winter Solstice ~~(June~~ & December 21, 2010), not sure how exactly, but something fun and simple.

My mother, who is the world’s best, planned a summer solstice evening for me when I was out visiting in June. We had star and moon shaped cookies and sat on the porch and watched the stars. An evening with two of my most favorite people in the world – best way to spend summer solstice hands down! Winter Solstice will be a final 2010 goal.

So...besides my failure on 3, a jazz show and winter solstice I have been sucessful! These goals were SO MUCH more fun than new year's resolutions! I just might have to do it again next year. :) Happy Thanksgiving Month everyone!

It's Not About Me Reminder - Operation Christmas Child

sometimes in life we wander off our path, we stumble through the trees and find ourselves in a place we had not planned. sometimes that it's a pleasant surprise to find ourselves there. sometimes it's simply where we are. i'm finding it hard to be fully committed to this space, and honestly i've battled this for a number of months, simply because i'm in a new place. when i come to share here, i find my words frozen and unmoving. i find my thoughts reluctant to be released and shared. my life is blessed and i am well, but my thoughts seem to want to remain with me, to stay in my space and not be shared. as much as this blog has meant to me, i can't override my desire to let go and accept where i am right now. i'm sure i'll pop up from time to time here, but i thought it only fair to let you know i'm going to focus on living where i am in the world of flesh and blood and leave my cyber life to take a back seat. thank you for joining me in this space the last 20 months - it's been quite an adventure for me. so, my friends, until we meet here again....eat well, live well and above all love well. Apple Pickin'

Happy September! Life is slowly returning to normal after the start of the school year and our annual trip to Michigan for my husband's family reunion. While up in Michigan we were lucky enough to spend the afternoon with some of our favorite little (niece and nephews) & big (their parents) people at a local apple orchard. While munching on apples and watching my older nephew and niece scamper up the trees to gather apples for us, I was reminded just how dearly I love fall. The weather, the reintroduction of warm drinks, the fall food (pumpkin & soups....) oh, yes, I am now ready. If only my weather would drop about 25 degrees all would be well. :) Until then here's my 'recipe' for making homemade applesauce, just encase you find yourself at an apple orchard this fall.

Homemade Applesauce

10 (at least!) apples, cored, peeled if you want (I peel a few then quit) and diced

water or apple juice, your call

sugar

(I warned you that it's a not much of a recipe.)

Put the diced apples in a pan, add enough water (or juice) to cover the apples. Cook on medium until soft, this will take a while. Add sugar to taste (cinnamon too if you'd like). Mash,or blend with immersion blender to desired consistency. Enjoy! Freeze any that you won't use in the next week or so.

Back in the Saddle Again

Soaring into a new school year...

Don't worry I am still alive...just been too occupied with back to school prep and home repairs (still ongoing and still very yuck.) to put together more than a few words to share. Oh yes, I am back at work as I was painfully reminded today at 6am when my alarm went off. Besides the alarm blaring at a way too early hour, it was a very lovely first day of school. I have 14 new little dears that I will share my days with for the next 10 months - they seem like a great group of kids and I'm enjoying the getting to know each other process. After teaching for a number of years (I'm in double digits now...) I have a different perspective on the beginning of the school year - I see in new ways how excited and nervous the kids are, how they are taking in each moment, each interaction, each smile or frown to decide how the day or year will go in their little lives. I have a new appreciation of how making the year special for children is very simple, it requires my attention and love not just my book smarts (although those come in handy for teaching new things like, say, reading). Today a little boy turned to me as he walked out the door and said, "Today was the best day of school ever." Yeah, that's what makes me set the alarm to jar me from my slumber yet again at 6am tomorrow morning - so hopefully I can do whatever made it the best day ever again.

Many, walking along the path of life, dwell upon their mistakes and failures and disappointments, and their hearts are filled with grief and discouragement. While I was in Europe, a sister who had been doing this, and who was in deep distress, wrote to me, asking for some word of encouragement. The night after I had read her letter I dreamed that I was in a garden, and one who seemed to be the owner of the garden was conducting me through its paths. I was gathering the flowers and enjoying their fragrance, when this sister, who had been walking by my side, called my attention to some unsightly briers that were impeding her way. There she was mourning and grieving. She was not walking in the pathway, following the guide, but was walking among the briers and thorns. "Oh," she mourned, "is it not a pity that this beautiful garden is spoiled with thorns?" Then the guide said, "Let the thorns alone, for they will only wound you. Gather the roses, the lilies, and the pinks."

Have there not been some bright spots in your experience? Have you not had some precious seasons when your heart throbbed with joy in response to the Spirit of God? When you look back into the chapters of your life experience do you not find some pleasant pages? Are not God's promises, like the fragrant flowers, growing beside your path on every hand? Will you not let their beauty and sweetness fill your heart with joy?

The briers and thorns will only wound and grieve you; and if you gather only these things, and present them to others, are you not, besides slighting the goodness of God yourself, preventing those around you from walking in the path of life? It's this time of year I feel anxiousness taking over, overwhelmed at the sheer amount of things to do and be, daunted by the task of giving my all to a group of children for the next 10 months in addition to being and figuring out me. Last year I stumbled on the story above. It spoke to me in a deep way. Too often I am that 'sister' stuck in the weeds and thorns focusing only on them - not the rest of the beautiful garden around me. My prayer as I enter this busy season of my year is that I can "Let the thorns alone'...and...'gather the roses'. Come on, let's go gather some roses, or zinnias :)

Embracing Life

It's my last week of summer break. When the summer started I made one goal - to embrace each moment, to live and love in the weeks of summer that stretched out before me. I have to admit that in some way I've failed, a little, with this goal - by focusing too much on plans and lists at times. BUT overall I feel like I've really embraced life's moments in a new way and with a fresh attitude. Maybe I should have a long essay on how I've embraced life and how to let go and live fully to share- but I don't because I've found it's a moment by moment choice to be present in the moment to drink it in with all you've got. There's really not that much more to it, like so much of this life, it is dependent on our attitude and choices.

Today as I ~~lazed about on the couch~~, was embracing relaxation I found myself watching CMT. I was raised on country so occasionally it pops up in my life, and I admit I do have a soft spot for a good country song. This video came on and pretty much summed up why and how to embrace life's moments. Life really is too short not to "Love the life you live" by embracing all it's moments. I thought I'd share the video...check it out, then go out and embrace all your life holds. :)

I just reopened my etsy store after the summer break and I am SO excited to now carry - what I am calling - artcards, a collection of 5 favorite shots from the last few years that were professionally printed into postcards but are blank on the back so they can also double as artwork for framing or display. I am testing the waters with my word series, we'll see if I'm the only one excited about them...

"Be Loved" was taken in Barcelona, Spain this summer when I happened to glimpse the 'be' bumper sticker on an old yellow Renault outside of the modern art museum...this is my fav :)

"Live Joyfully" was taken in my very own garden. It's a shot of some garden stones I made a couple years ago along with some yummy greens. I'm toying with the idea of making some more stones to sell on etsy or give as gifts. They're fun.

"Ciao" was taken in Florence, Italy last summer. We were at a park overlooking the city when we stopped to sit on an old stone bench, when I looked down I saw "ciao" (hi or bye) written on it.

"Happy" was taken in Barcelona, Spain this summer. It was the second part of the name of a show on our street Carrer de la Merce. The shop's complete name is Berry Happy and it has fabulous clothes, fabric and artsy etsy type stuff.

"...Wonderful World" was taken in Tulum, Mexico in November of 2008. My husband's whole family rented a villa there for the week of Thanksgiving to celebrate my mother-in-laws successful completion of chemo. The rooftop patio had amazing views and the quote was written on the back of a built in outdoor bed for sunbathing.

Embracing Each Moment

I'm slowly learning to embrace the moments that pass me by all too quickly. This morning my dearest other half custom made me my very own 'cafe con leche' soya version. He even topped it off with cinnamon & sugar! A yummy moment to embrace....happy weekend everyone - go embrace some moments this weekend!

I've never spent more than about $20 on a purse, except for the one I bought in Italy last summer, it was $40. But, alas...I've fallen far from my tomboy ways and unfortunately for a fabulous purse designer that is way more. Still it's fun to look, right? And that's free!

Foodie Fridays - Broccoli Salad

Now that I'm back in reality and cooking again Foodie Fridays is back! Last Saturday I had this super yummy salad while catching up with some old friends and had to immediately ask for the recipe...

Broccoli Salad

Mix:

4 C. broccoli florets

1 C. sliced celery

1-2 C. halved grapes

2/3 C. slivered almonds

1/2 C. sliced green onions

Stir together:

1 C. Vegenaise mayonnaise (you whatever you use)

1/2 C. sugar

2 T. rice vinegar

1/2 t. curry powder

Mix together everything and enjoy!

Notes: I think you could make this with less sugar maybe 1/3 or even 1/4 cup, depending on your taste. I'd also like to try using agave nectar in place of the sugar next time.

Verdict: I love sweet-ish salads so this was a winner for me. I even put a scoop on a bed of lettuce greens and mixed it in with a chopped avocado for a yummy way to get more greens in.

* I happened upon this blog party of sorts...a whole group of bloggers writing every Tuesday about small things that make them happy, I had to join in! I won't do it every Tuesday, but I will join in when the moment strikes and it just so happened that earlier today it did...

Today when I sleepily rolled over relishing in my summer sleep-in bliss I turned over my cell phone to see the time 9:58am shining back at me. It took about 12 seconds before the realization that I had a grooming appointment today for my dog at 10am. And the groomers house is thirty minutes from my house. I vaguly remembered the groomer had said it was okay if I was late when I made the appoinment last week, to which I promptly thought "I won't be." Oh, ye of too much faith in yourself. I quickly threw on last nights outfit and grabbed Mackey before hitting the road. When I roared into her driveway and scrambled to the door with the words "So sorry I'm late" tumbling out I was met with, "oh, are you? that's fine." Note to self: what again was my major stress in the first place? I let my thoughts soak into my type a little head as I cruized into a parking spot at a local coffee shop. When I closed the van door I was met with this sight...

I smiled as I reached for my ever present camera to capture the moment. Somewhere in the recesses of my mind I heard the familiar saying...'don't sweat the small stuff and it's all small stuff' Sipping my chai for the next 45 minutes I had to smile at the creative ways God reminds me to relax and enjoy the ride.

The years have removed us from the forts, pool diving shows, toys, holidays and giggles we shared so long ago. Time has made us each grown ups, and distance has given us different coasts to live on. But not for one moment did my love for you wain, you've always been on my mind and in my heart. My best friend from childhood, my little brother always and now a man I'm blessed to call a friend. I'm so proud of the loving husband and father you've become. I pray you'll be blessed with a wonderful start to your 30's and all that lays ahead. Happy Birthday, I love you little brother!

Barcelona at it's best...my little city guide

Without further adue here is my city guide to the city I've enjoyed making home for the last month...

Starters - Some basic information:

The old part of the city is divided into different areas, hands down the best area to stay, explore and eat in is El Borne (also called La Ribera in some guide books). It's quaint, quirky, picturesque, close to the beach but also part of the historic city - my absolute favorite area.

Within El Borne we had a very favorite placa we enjoyed sitting in, it sits in front of Esglesia de Santa Maria del Mar has great food there and is a wonderful place to grab a table and chat for a few hours in the evening.

The Sights

Sagrada Familia - a must see, the Eiffel tower of Barcelona, very cool at night

Park Guell - take a picnic then ditch the crowds by wondering around the various paths as opposed to just the mosaic tiled overlook. Great views of the city and classic Gaudi- off the wall and beautiful.

Fountain Show in front of MNAC (Museu Nacional d'Art de Catalunya) - Go to art museum a couple hours before it closes then walk down to the main fountain and stake out your spot for the show. Each one is different and they run every 30 minutes. We stayed for two, after dark it's truly magical.

Picasso Musuem- another must see and it's in El Borne so hit up some restaurants and stores while your in the area.

Parc de la Ciutadella - take a picnic and don't miss the fountain

Hit up the Barcelona Cathedral on Sundays about noon to see the Catalan dancing

Barceloneta Beach - there are 9 (or close to it) beaches (they all run together) in Barcelona. We visited them all and Barceloneta was hands down our favorite. Close to restaurants to run and get your tomate con queso bocadillo and not quiet as busy as the main beach. Perfect way to spend Sundays when EVERYTHING else is closed.

Sitgues - an easy 30 minute train ride out of the city (which you can connect to via metro) this beach town a is a great place to spend the day at the beach.

Monserrat - 1 hour outside of the city (again connect to the train via metro) a very cool mountain monastery worth a day trip, or half day.

Mercat de la Boqueria - fruit, veggies, and meat market like no other. Located off the left of La Rambla, over halfway up it's the only good reason to walk up La Rambla. Take your camera, an appetite and enjoy!

Food

Just a note that all restaurants have a 'menu del dia' (menu of the day) that consists of, generally, a drink, appetizer, main dish, dessert and sometimes even bread. It's a bargain of a lunch deal usually coming in somewhere between 5- 12 Euros. And while I'm talking food you have to get potatos bravas (my favorite tapa), tomate con queso bocadillo (tomatoe and cheese sandwich) is a great picnic food, and cafe con leche (coffee) is a must to start off your day and yes they will do decaf.

Bellamia - Carrer de L'Espaseria
      DELICIOUS gelato in a city little shop. Gelato shops are everywhere but this is the best I've found.

Alsur Cafe - Plaza Sant Cugat
       Yummy restaurant with large seating in the plaza as well as great atmosphere inside. The food and drinks are well made and good. We visit here so often the waiter actually rattled off our typical order when we sat down last time. :)

Bubo - Placa de Santa Maria
      Okay so the main waiter at this restaurant knew us by sight too. The desserts here are literally award winning (2005 chocolate cake winner, I highly recommend it) but the food and drinks are also winners in my book. You can't beat the atmosphere here either, it sits on my favorite plaza in all of Barcelona, classic European square overflowing with charm.

Moo - Rossello 265
      Actually NOT in El Borne, but easy to get to by metro or a bit of a walk from El Borne. Pricey but has a very well done vegetarian tasting menu that I highly recommend.

Gravin - Rera Palau 3
        Very well made fresh Italian meals plus there's always a vegetarian option. We recommend the citrus cream pasta - the only time we've found it outside of Italy and SO good.

Cafe Bliss - Placa Sant Just 4
     Another frequent stop for us. Cute little courtyard to sit and sip cafe, but great food with lots of veggie options.

Hoffman Pastisseria - Flassaders 44
      Pastisserias are on every corner here (like Starbucks at home) but this one has some of the best we've tasted here...and I'll be honest I've done a great lot of pastry tasting.

Gopal & Vegetalia - Placa de George Orwell
    Two all veggie restaurants with really well done food. I would recommend anything on the menus but their veggie patties (both of which have a huge variety) are some of the best I've ever had anywhere. Vegetalia also has other locations in the city.

La Granja - Banys Nous 4
     Chocolate lovers this is your place! Hot and cold chocolate drinks that are divine. Pastries are excellent too and it doesnt' hurt that this place has great old world charm with stone walls that make you feel like you've jumped 50 + years into history.

Milk - Gignas 21
     Very cool atmosphere and food to match in Barri Gotic area. Has a brunch Thursdays- Sundays that looks delicious.

Shops

If at all possible arrange your trip to coincide with the annual rebates (major sales!) from the end of June through July. Massive deals in every store. Here's just one example I got a great jacket that's well made for 11 Euros, it was originally 50 Euros. I have shopped my little not-such-a-shoppers heart out...I promise it's a shoppers dream! Don't forget that nearly all shops are closed on Sunday and most, expect the chains, close daily for siesta from about 4-7pm.

Lancet - Carrer Ample
    Like so so many of the shops here that I love it has a bohemian feel. Run by a couple that makes most of the items they sell - jewelry, clothes, belts, purses.

Bijou Brigette - Carrer de L'Argenteria 6 (there are other locations in the city, it's a local chain)
     Fun place filled to the brim with jewelry all coordinated by colors. There's a nice selection of fun pieces.

Tea Shop - Placeta de Monticada, 10 - same street as Picasso Museum (again a chain in the city, sort of      like Tevana)
      I'm not a tea lover but I found a delicious iced fruit mix that I loved. This place has tons of teas.

Natura - Carrer D' Avinyo (and really in every neighborhood, seriously an area chain)
     This is a bo-ho shop from top to bottom...tunics, scarves, fun jewelery, housewares...all the latest European bo-ho wear. I loved it and bought plenty of great things here.

Bazaar - Carrer D' Avinyo
    Very small boutique shop with a fun selection of hats, bags, clothes and jewelry. You'd find stuff here that's one of a kind.

Berry Happy - Carrer de Merce
    Right down the street from our place this was an instant hit for me. Again one of a kind stuff, even sells some laminated fabric in super fun prints for the crafty minded.

Intermisimi - Av del Portal de Angel (but also all over in shopping areas)

European Victoria Secret with fun stuff, and the July sales are fabulous. Think matching unmentionables set for 15 Euros total. Good stuff and super comfortable.

Promod - Av del Portal de Angel (but again all over in shopping areas)

I first fell in love with this European chain (that doesn't ship to the US) in Italy and lucky for me it's here too. Think a spunky Ann Taylor Loft shop and you've got it's number. I found a great work outfit that's classy with a twist, perfect.

Olapao - Calle Princesa, 26 (up the street and around the corner from Picasso Museum)

    Spent the most $ in one place here. A local boutique run by the designer with great women's clothes and a few pieces of jewelry. One of a kind pieces that fit very well. I enjoyed chatting with the designer as I bought two of her dresses.

Antherea - Regomir 4
    Small jewelry boutique that only sells Barcelona artist work. Very cool stuff at reasonable prices for one of a kind hand made pieces.

Opossum - Carrer de Sant Sever 7
    Eye candy for your home with lots of handmade accessories to decorate home without taking home a "I love Bareclona" blanket or some such nonsense. :)

Fun to Do

Jamboree - in Placa Real (a big and picturesque placa)

One of the many jazz clubs. Worth an evening of hearing local jazz artists putting on a great show.

Cook & Taste Cooking Workshops - Paradis 3 (behind Barcelona Cathedral, just off Placa de St. Juame) Great way to spend part of a day learning how to cook local foods. They will do vegetarian too!

Every Sunday, around mid-day the people of Barcelona (well not ALL of them) gather in front of the Barcelona cathedral to do this special Catalan unity dance. How cool is that? It's just one of the SO MANY things I am learning to love about this city. In lue of writing way to many posts describing how much I love this or that about Barcelona I'm working on a city guide of all my favorite place to shop, eat, hang out and visit in the city just in case you venture this way at some point. It'll be up sometime in the next 7 days, when sadly my month long adventure comes to a close. For now I'm off to live up my final week here! :)

Embrace Art

I love art. I always have, the art classes I took in college helped me to finally put some names to work I loved. I like to visit art museums in DC and other areas when I travel, but I've always relyed on the "masterpieces" list on the visitors guide to decide what work to be sure I see during my visit. This week we went to MNAC (Barcelona's main art museum) and I dutifully pictured up my visitors guide with the ever present "masterpieces" list. As I entered the first gallery room my husband started to look over the map and pick out where we should head to see the first "masterpiece". In that moment I decided to ditch their list and just wonder through the museum an allow myself to enjoy the art that spoke to me - whether or not it was on the masterpieces list. I had a great experience there. I felt like I was able to really embrace the art in a more personal way, to enjoy the art that appealed to me. I think I just might ditch those visitor guide lists for all my future art museum visits.

p.s. I'm signing off to go watch the World Cup final game...Spain vs. Holland. The Spanish LOVE their football, the last win was celebrated with over an hour of chaos in the streets, so I'm hoping for a memorable night. :)

Cookin' in Espana

It's no secret that I love food and there seems to be no end to delicious food in Barcelona, even delicious vegetarian food! As I mentioned before we have two scrumptious veggie restaurants down the street and managed to find an excellent cooking school that taught us some veggie dishes. Cook & Taste, the cooking school, was an excellent place to learn some key dishes so our Spanish favorites can come home with us. I'll type up the recipes once I use them at home and dedicate some Foodie Friday posts to them, but for now here are pictures of the yummyness we helped make and eat...

The Barcelona Story - Cliff Notes Version

I happened by a post wedding street scene

So, I thought maybe I'd share a little about what I'm doing in Barcelona for a month and why I'm here. After our fabulous trip to Italy last summer my husband and I started talking about going to somewhere for a longer period of time. He'd always wanted to go to Spain and I studied here a summer semester in college, so the idea started taking root for this summer. This idea took a 'full steam ahead' approach when I decided to apply for a scholarship/grant program my school system has in order to brush up on my college Spanish now that I am actually teaching Spanish to my kiddos at school. A colleague and her husband also had a similar idea and so we joined forces and moved forward. After applying and eventually being accepted we found an apartment and awesome priced tickets and were off! So, now I find myself trying to scrape the rust off my Spanish skills and thoroughly enjoying Barcelona. It's a very international city and I've found it a little too easy to use English since about 80% of the people we talk with know at least some conversational English. But I'm getting better! Being vegetarian has also proven to be SO easy, there are even 2 vegetarian/vegan restaurants a block from our apartment! Today we took a vegetarian cooking class - more on that in another post. Being here has rekindled my love for living abroad...alas I don't think that this is the season in my life to do that again right now, although I'd love to. I think it's in our future, but not just yet. For now I'll just focus embracing Barcelona. Happy Trails to you!

Lovin' This Song!

Our apartment TV only receives 1 sort of English channel, a music video channel that plays a mix of 80's to current Spanish and English videos. It's not a problem because outside of the World Cup we aren't really watching much TV. Even still more often than not if we're "home" the TV's on to this channel since it is a nice distraction and as a bonus I'm actually learning some new music...like the song above that I'm LOVING! (Although, that might also be because they recycle videos quite quickly on this Spanglish music video channel so I've heard it 15 times in the last 2 days....). Macy Gray is one of my all time favorites (love that voice!) and her message is a great one. This will be an itunes purchase once I'm home. Being out in a new, for me, place in the world right now I am finding more beauty in places and people than I would expect, there truly is beauty in the world. :) Enjoy!

Embrace Slowness

Everything in Barcelona, and actually most of Spain and Europe, moves a pace much slower than us Americanos. At the vegetable market the other day the vendor spent an easy 8-10 minutes chatting with a customer while we waited to pay her for the swiss chard we wanted to buy. I could feel my impatience building as I waited and she must have felt it (or recognised us a Americans) and paused twice to tell us "uno momento." At restaurants it might be 10 or 15 minutes before a waiter or waitress comes by to check on you and once you're done eating you must ask for the check otherwise one will not be presented to you, because of course it is expected that you will sit and linger long after the meal. As I've allowed myself to sink into the slowness I've found this slower pace of life I've found the beauty in slowing down. The most critical benefit for me has been loss of that need to rush in everything and everywhere. There has been a physical loss of stress. No need to hurry, no need to stress. Yesterday, after walking to a store to pick up something I stopped in front of an old church and sat on the steps, just drinking in the moments, embracing them. It was so refreshing. I have to admit that I am loving this pace of life. I might find it harder to go home than I planned...

Embracing Food

Churros con Chocolat

As women we sometimes fear the results of eating what we want. It's sad really that something as simple as food can inflict guilt, frustration and disappointment in ourselves. One thing I'm trying to let go of this summer is the focus over what I eat or don't eat. It's easy to eat what I enjoy, but harder to not allow the guilt to creep in if it's "bad" food. So, I am working on embracing food and dropping the "bad" label. I am allowing myself to enjoy food I like, which includes everything from dark chocolate, to pizza, and even zucchini and beets. Balance is key, right? I am finding that by listening to what I want to eat allows me also listen more to how much I'm wanting and believe it or not sometimes it's not the whole batch of cookies :) Happy Eating Everyone!

After 2 nights on a plane and way too many hours in airports I have ventured from the US Pacific Northwest to Spain's capital. I'm WAY off on my sleeping, it's now 6am in Madrid and you'd think for my first night sleeping in a horizontal position in 2 days I'd be out all night, but alas 5am has found me wide awake! Oh well, I'm hoping that after doing some stuff online I'll get sleepy again...wishful hoping probably...

We are just in Madrid until tonight when we'll head to our apartment in Barcelona. I must admit to looking forward to getting settled there even though I've thoroughly enjoyed Madrid. The old cities in Europe are so picturesque it's hard not to love them. I'll be posting pictures on flickr so if you're brave enough to look through someone else's vacation photo's feel free to check them out.

Embracing Nature

Being in Central Oregon with my parents is such a nature feast! There is so much natural beauty everywhere! I have thoroughly enjoyed the 'big sky' as we call the view in their backyard (below), a breathtaking hike through Salt Creek Falls and just sitting on their front porch and soaking in the sunshine and views. In modern society we have separated ourselves from nature too much. I believe there is a healing element to nature, a something special and unexplainable that calms and soothes our souls. Moments spent in nature bring balance to my life.

Embracing Old Friends

Has anyone else found that over the years it's so easy to loose touch with people that were once part of our lives? I am guilty of not taking and making the time to keep up with special people from my past. Enter Facebook...with all it's negative parts the big positive that keeps me signed up and loggin' in is how it keeps me in touch with many many special people from all different times of my life. In fact, Facebook is why last Thursday my old (I graduated 10 years ago!) college buddy Heather and I met up in Portland and enjoyed a catch up lunch. It's been 5 years since we last happened upon each other at a national teachers convention and much has happened in our lives to share. We found that life has brought us each to a good place and as fellow teachers we had plenty to chat about...old memories from our college days, our lives and classrooms now and our hopes for the future. My only sadness was that this wonderful woman that I enjoyed catching up with lives on the other side of the country.... but maybe, just maybe by making and taking and embracing the moments to catch up I'll be better at keeping this old friend close.

Embracing Family

Since my summer motto is "Embrace the Moment" I wanted to take time to share some of those moments...

Family is special. Some people live close to family. I don't. But I am blessed with a great family even if I don't get to see them nearly as often as I would like. A big part of what I wanted to do while out west this week was to spend some quality time with my loved ones. Pictured above are my cousins, on the ends and sister-in-law, in red. We all met for a coffee date one morning and enjoyed spending the time visiting about life, love and family.

Spending a few days with my sister-in-law has reminded me of what a great fit she is for my brother and our family. She's a devoted mom, fun and loving wife and caring CNA. The compassion and concern she has expressed for her patients is truly wonderful. I am impressed with the woman she is and has become over the years.

Being 10 years older than my cousins it's been really special to me getting to know who they are now as young women instead of just kids. And as someone with no sisters it's also been special to see the family resemblance in the face of other women, it reminds me that we are more than just friends, but friends that are also family. I am so proud of both of them - hard working, studious women making their way in the world. Working jobs (yes, sometimes more than one!) while going to school...it's an impressive feat for young women. Just spending a couple hours with them has made me want to spend more time with them, so I'm working on getting them out my way for a visit sometime hopefully soon.

My youngest cousin is just 15, but a wonderful young woman. Since I was 16 when she was born I'm enjoying seeing her start to figure out who is wants to be in this world. I'm excited to see what her high school years will hold for her and glad to be able to connect with her and get to know her on a more grown up level. She'll be making a visit out to see me with my mom next summer (sort of a cousin tradition once they get in high school) and I can't wait to spend some more time with her!

In this fast paced world it's hard to have the time to spend with loved ones far away, but even if it's just a text message or a short visit it's worth the moments shared. Although it might make you realize that...sometimes just a few moments of embracing family isn't nearly enough. I love you Addie, Ellie, Kylee, & Gin!

Lots of suitcases and cleaning and lists around my house right now (and not any picture taking - thus no pix). I'm feeling a bit anxious and excited to see what the coming weeks have in store for me. Tomorrow morning I head out to spend a week with my west coast family - brother, sister-in-law, aunt, uncle, cousins, parents, even catching up with a couple friends out there. Then only hours after landing back here (seriously like 4 hours - pray I don't have any delays!) we're off to Spain. I think the coming weeks will offer lots of chances to practice my summer motto - Embrace the moment. I just hope that I can keep focused on truly embracing each moment instead of rushing on to the next one as I tend to do. Breaking out of Type A hyper-mode sure isn't easy.

I'll be popping in here from time to time but I hope to do more living and enjoying and embracing the moments that come my way then writing about them. :) Well, we'll see... I do like to write about them too.

Celebrating the big 3-0!

Celebrating Pam!

My dear friend Pam turns 30 next week and today we surprised her with a girls brunch and day in DC to celebrate. I remember thinking how old 30 sounded when I was a teenager...but yet as I've embraced these years I find them to be the best of my life. I wouldn't go back to another age for anything. I'd say the biggest three changes from 20's to 30's for me would be in the areas of self-acceptance, friendship, and perspective.

Self-acceptance is not an easy one for many women, including me. I've loathed my body, my choices my circumstances...all of it at one time or another. Now, I still have those fleeting moments, but in general I feel sort of...at peace with who I am physically and emotionally. I'm actually having fun pushing my boundaries with clothes, choices and circumstances. I feel comfortable enough with who I am to try new things, even if it means failing. Sometime failing is worth the experience and story. :)

Friendship is so sweet once we all lay down the crazy girl drama of younger years. Once we realize that other women are actually on our team and can really help make this life fabulous it's a whole new game. I can't imagine my life without my girlfriends.

Oh, I sure hope to be blessed with many more trips around the sun but these first thirty something have taught me a few things about life, love and myself - they've given me perspective on what's really important in this life. In my book it's God and people, everything else comes and goes. As I age I am more able (usually) to put things into perspective as opposed to let circumstances mess with me too much. There is a wisdom that comes through life experience.

Eight Weeks of Summer

summer verbs for sure!

That's what I have before me...eight weeks of summer. It's always so overwhelming and full of promise at this point - the last day of my contract for the school year. Usually I make a nice list of "to do's" and start plotting how to cross them off before mid-August. I am resisting the temptation to do that this summer because it's going to be so different. I leave next Tuesday on a my summer adventure and while I will be various places near and far won't return for 5 weeks. Part of me is excited for my unusual adventure to begin and part of me is sad knowing that this summer won't be like all my others. But since it is unlike the others this unusual summer can't begin and follow my little to do list like every other summer, it must be different. I think it will have a motto instead of a to do list, one that's already begun to exert itself on me...Embrace the moment.

To me this means I enjoy each moment, that I live and love fully in each moment, that I make the best choice with the information I have at each turn and accept the results, that I breathe in the simple and sacred moments because each one will slip away ever so quickly. I generally tend to live in a hurried pace, but this summer I want to lay that aside and live in each moment not wishing for ones past or ones yet to come. I want to embrace the woman I am right now, not the one of yester-year or the one I am becoming just me, now. Come to think of it, this might be my best summer "to do" list yet.

You might remember from last year that for the last day of school my whole school goes roller skating. It's a fun relaxed way to end the year. While we were there last Friday one student's dad was talking to me about his daughter and said something that struck me with an "ah-ha" moment. He said, "We always think that the best days are coming, but really they are right now."

With my busy go-go of getting ready for my coming trips and finishing up at school and getting the house ready for our guests and settling all the financial arrangements and....well, you get the picture...I needed to be reminded that my best day is always going to be right now.

The first of my mini zinnia's popped out today! Three cheers for summer's bounty!

I am slowly starting to climb out of the craziness that has been my life the last couple weeks...ending a school year, flying out for the long weekend with family, basically keeping my head above water (haven't "ate" much good stuff recently - more stress and worry and work)...I hope to be a better blogger now that my work load is shifting into easy mode for a few weeks and I can spend more time appreci"ating" life. We went to visit family over Memorial Day weekend in Madison, Wisconsin - my first time there, a lovely place that I quite enjoyed. My food for thought today comes from the bathroom mirror of a diner there. Thought provoking enough to share...What have you "ate" today? :)

Friday Foodie - Almond Butter & Date Smoothie

Yes, I know it's not Friday. But there are 7 days of school left and I'm exhausted (thus the obvious lack of blogging and poor picture and so many other things...) Anyway, I wanted to share this yummy smoothie - that's an all time favorite of mine. Overdid the cinnamon...but it was still yummy!

Almond Butter & Date Smoothie

1 frozen banana

3 chopped dates

1 C soy milk

1 T Maple Syrup

1-2 T Almond Butter

Dash of Cinnamon

Put all ingredients into blender. Blend until smooth. Sprinkle with a touch of cinnamon. Enjoy!

Notes: I don't always use a frozen banana and when I don't I just throw in a small handful of ice.

Verdict: This is a favorite dessert of mine. So sweet and yummy and refreshing!

Saying Goodbye...

A dear friend of mine is retiring from our school this year. She's taught art at our school for over 20 years and is AMAZING. The stuff she is able to guide the students to create is just unbelievable. Her connection to the students is special, her talent in working with them obvious. It's so hard to say goodbye sometimes. So, my friend Pam and I set out to make her something worthy as a send off gift...

The fabrics were chosen especially for her - bold, beautiful, full of life and together creating something special. It rolls up and ties like my other one so she can use it as she travels and enjoys all the adventures yet to come. Goodbye Rosemary! We will miss you deeply!

How Dare We..

How dare we spend time, money and energy on frivolous wants.

How dare we ignore the millions in this world who are hurting.

How dare we live like life is all about us.

Crazy Love

I just finished Crazy Love by Francis Chan. It is the most challenging and inspiring book I've read since The Irresistible Revolution. Honestly, I can't even begin to share with you how thought provoking and life changing this book has been for me - I literally underlined and wrote on nearly every page. The book consistently takes the reader back to the Bible to point out the love God has for us, the awesomeness that He is, and what our raw and real response can be when we surrender to Him. I'll save the moving chapter on "Lukewarm" Christians for another post - but it's powerful! He even has videos that go along with the book, I was especially enjoyed the powerful reminders in The Awe Factor video. Reading it has brought me to a new place in my journey to "daily be" His. It has me thinking deeply and praying passionatly about what it means for me to live and love for Jesus. (and you know how I feel about God's call to LOVE)

Hundreds of words from this book that have moved me and spoke to me, but this one speaks to the bottom line of what Chan is sharing...

"There is nothing better than giving up everything and stepping into a passionate love relationship with God, the God of the universe who made galaxies, leaves, laughter, and me and you."

p. 106

Bottom line, unless you feel fully satisfied with your real and personal walk with God, unless you feel you are giving 100% of yourself to and for God, unless you are perfect (ha ha) then stop what you are doing and get your hands on a copy of this book. It's that good. I promise.

I think I might have already shared this song, I am waiting not so patiently for it to come out on itunes (June 8!). I really think it was unfair to give it to Christian radio stations about 6 months before it's on itunes...but I guess I didn't get a vote :) . I love that He is at the point of our breaking. So often we feel so alone at the moments that break our spirits and hearts, but that's just because we are so surrounded by darkness and noise. But, my friends, the good news is that He's there. He'll always be.

It's Not About Me Monday...Friday Edition

access to clean water?

electricity?

a job?

food?

a bank account?

a car?

more than a couple changes of clothes?

If so, I am happy to inform you that you are among the wealthiest in this world. No joke. No matter how "poor" or "broke" you might see your circumstances the fact that you are reading this blog on a computer run by electricity puts you up at the top of the spectrum. I know as you look at your bills and finances and situation you probably feel anything but wealthy. To put things into perspective I invite you to hop over here and here or here. These stories center in the Dominican Republic but the impact of facing poverty is universal. Wherever it is we see the pain and sorrow it brings. I don't know about you but I get bored of thinking so much of myself. Our human nature has molded us to be very self centered people and I for one will admit it. I lament over my clothes and thighs and having to clean my house. But honestly those things are so insignificant in the scheme of life. They don't matter, not one bit - I wish I could really get that into my head. As I mentioned in an earlier post I'm reading Crazy Love and it's really speaking to my heart. Through it I feel the tug of the Holy Spirit calling me into a life more God centered. I know that part of that process is choosing to put down the flag of self. To sacrifice, really sacrifice for others. God is teaching me that though a personal journey of surrendering something precious to Him and I feel Him also calling me to give over something more. The first is an emotional surrender, a mental handing over of control to Him the second is a physical giving of myself and my earnings. These quotes pretty much jumped off the page and gave me a good punch in the gut...

"...the American church is a difficult place to fit in if you want to live out the New Testament Christianity. The goals of American Christianity are often a nice marriage, children who don't swear, and good church attendance. Taking the words of Christ literally and seriously is rarely considered. That's for the 'radicals' who are 'unbalanced' and who go 'overboard.' Most of us want a balanced life that we can control, that is safe, and that does not involve suffering."

I have to admit I've always tried to live in way that my life that was balanced that I could control and that doesn't involve any suffering. I don't give so much that it impinges on my standard of living. But, my heart knows, my eyes can read Christ's words over and over again that say, in various ways, " I was hungry and you gave me something to eat, I was thirsty and you gave me something to drink..." Today I ask you to consider what God might be asking you to sacrifice for him. The blogs I listed earlier were supporting World Vision, a great organization. But there are many other great causes out there ADRA, Eden Garden Orphanage (my church has a group here now- great work being done there!), Half the Sky , and so many more- search your heart, ask God to show you how you can help someone in need out in this great wide world.

It's That Time of Year Again...

Oh yes, as hard as it is to believe the end of another school year is rapidly approaching - four weeks to go...so much to do...many thoughts filling my mind but somehow not making here... I have been inspired anew, by one of my new favorite bloggers Gitzen Girl, to savor each moment we are given - especially this post. Each and every one is a blessing! So here a few of my recent moments...

Finally finishing my first Amy Butler Barcelona Skirt - simple but nice. It's a little strange to be wearing something you made, but hopefully it doesn't look "homemade" in a bad way.
Watched one of my younger kiddos taking "notes" during Bible class, and found this on his desk. Seriously, I love my job. (Even if he spelled Jesus wrong - for this kid I am touched).

LOVING the Vegetarian Pho that my dear foodie husband found nearby. I think I'll have to attempt to re-create it...look for a Foodie Friday in the coming weeks.

And not far from my mind, even while soaking in the 80 plus degree rays and listening to some tunes is our summer in Spain. Sadly, my college Spanish is a little rusty after 10 years....
More moments refreshing that with CD's and online practice have ensued.

Had an impromptu date with my husband (his idea!) to one of the Smithsonian Art Museums, and saw among other lovely paintings this Van Gough. Van Gough has always been one of my most favoritest (I know it's not a word, but it should be).

I LOVE sweets. It's a fact I've try to overcome and bury, but it remains my weakness in the food world is sweets. However, I am slowly learning how much better I feel when I limit my sweet tooth to a weekend treat or two. It's a process, but I'm learning. That said there are times when nothing quite beats a warm chocolate chip cookie or fluffy cupcake. Sometimes it's the extra bit of yumminess that completes my day. I wish you something yummy in your day today!

Surrendering to Him

I'm reading Crazy Love and it's really challenging me to try and see God, his power, His love for us, and the Bible with new eyes. The book sort of landed in my lap at just when I would need a fresh perspective, especially in the area of surrendering my life to Him. We all talk about this but in reality there are huge chunks of my life that I hoard and don't surrender to Him, even if I pretend to in my prayers I don't really let go. Recently, I have been wrestling with a huge something that I wanted to go my-way-or-the-highway. Sure I prayed about it, I lamented about it in my thoughts I thought I let go of it...but yet I always found it back in my mind - planning and wanting it to be the way I wanted. In the midst of many many tears and words one night I was struck with a question that stopped me cold. I'm warning you it's not a question you'll want to hear because it might turn into one you ask... I hear the question, "Who says I deserve for MY dreams to turn out MY way?" Now for us Americans this is a jagged little pill that we don't swallow. All of us deserve all of our dreams should come true, right? But seriously, where are we promised that all our dreams will work out our way? What about the woman in Africa dreaming of a full life for their child who dies of starvation? What about the husband in Haiti who lost his family and everything in the earthquake...didn't he deserve his dreams to come true? Who do I think I am to feel entitled for all my dreams to come true? Where then is thre room for God's plans for my life? I live in a home, have a job, a loving family, money to pay my bills...I'm so blessed in so many ways already. Can I not leave my dreams to Him to grant or not? In His time? Instantly I saw the sweet truth of surrender - to want His plans is where I need to be. To pray for His will and His will only, that's where I need to be putting myself.

I can't say it's easy. In fact I am finding surrender not to be at all passive, but an active choice to give something to God. Sometimes you have to give it to Him every hour until you really let go and then it's back the next day, but surrender is where we find peace. It's the only place I find peace. Peace from the selfishness of who we are as humans wanting only our way, peace from the desires of others, peace of living in Him.

Remember how I shared that God will affirm us in my What If list? Well, I received this email today with a perfectly timed message just for me...

"We want to have it all and do it all, and become upset when it doesn't happen. Surrendering to God is not passive resignation, fatalism, or an excuse for laziness. It is not accepting the status quo. It may mean the exact opposite: sacrificing your life in resistance to evil and injustice, or suffering in order to change what needs to be changed. God often calls surrendered people to do battle on his behalf. It's not for cowards or doormats. Surrendering is not putting your brain in neutral and giving up rational thinking. God would not waste the mind he gave you! God does not want robots to serve him. Surrendering is not repressing your personality. God wants to use your unique personality. Rather than being diminished, surrendering enhances your uniqueness."

My friends, I pray that in whatever you might be struggling with you consider really truly surrendering it and yourself to God. It is only in giving our plans and ourselves fully to Him that we receive the life He has planned for us - a life that draws us closer and closer to Him. Is there anywhere else you truly want to be?

It's Not About Me Mondays - Spread Some Love

I shared last week that an old friend had died under heartbreaking circumstances. Even though I haven't been in touch with him for a few years it's shaken me to my core. I just can't wrap my mind around his choice and the pain his family is battling breaks my heart. All I've been able to do is pray and pray and then pray some more for them. This is the second person from my past in the last few months that has passed suddenly, the second person that I never told what they meant to me. Granted these people weren't needing or even wanting my words of love, but yet my chance to share those words are gone. As I wrote a short note to my friends wife on facebook I read the many many memories and words of love shared and thought...why don't I make it a point to spread some love to those in my life and past now? Before something takes that chance away? What if (Bonnie's challenge is still fresh on my mind) I sent message of memories, love and affirmation to those who have shared this journey of life with me in some way?

After praying over this little idea of mine I have decided to do it. What do I have to loose? Maybe a few old friends thinking I've gone a little coo-coo? :) Maybe I'll bring a memory back to someones mind, maybe I'll let them know how valuable they are, hopefully I'll make someone smile. I'm starting on Facebook and working though my "friends" list. We'll see where it goes from there.

I challenge you to find a way to spread love to those in your life and past too. Write letters, emails or just messages on facebook and tell people they are valued and loved - spread some love. You just might make someones day. Oh, and if you're my facebook friend...watch out I'm heading your way in the next couple weeks. :)
